Instructions
- Step 1: Salt the cucumbers
Lay the cucumber slices in a single layer on a clean kitchen towel or paper towels. Sprinkle evenly with the fine sea salt and let sit for 10–15 minutes to draw out excess moisture. - Step 2: Pat cucumbers dry
Gently pat the cucumber slices dry on both sides with another towel to remove as much moisture as possible. This keeps the sandwiches crisp instead of soggy. - Step 3: Make the cream cheese spread
In a small bowl, stir together the softened cream cheese, mayonnaise, and Greek yogurt until smooth and creamy with no lumps remaining. - Step 4: Add lemon and herbs
