Ingredients

- 1 1/2 pounds boneless, skinless chicken breasts, cut into bite sized pieces

- 1/2 teaspoon smoked paprika
- 4 cups fresh baby spinach, roughly chopped
- 8 ounces cream cheese, softened and cut into cubes
- 1/2 cup sour cream or plain Greek yogurt
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1 tablespoon fresh lemon juice
- 1 tablespoon fresh parsley, chopped, plus more for garnish
Instructions
- Step 1 : Prep the oven and pan
Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch (23×33 cm) baking dish with olive oil or nonstick spray and set aside. - Step 2 : Brown the chicken
Heat the olive oil in a large skillet over medium high heat. Pat the chicken pieces dry with paper towels, then season generously with salt and freshly ground black pepper. Add the chicken to the hot skillet in a single layer. - Step 3 : Sear and transfer
Cook the chicken for 5–7 minutes, stirring occasionally, until lightly browned on the outside. The chicken does not need to be fully cooked through at this stage. Transfer the browned chicken to the prepared baking dish in an even layer. - Step 4 : Sauté the onion

Notes
- Cut the chicken into evenly sized bite sized pieces so they cook at the same rate and stay tender.
- Softening the cream cheese to room temperature makes it much easier to stir into a smooth sauce.
- If you prefer a looser sauce for serving over pasta, stir in an extra splash of warm chicken broth after baking.
